Happy Saturday Everyone!
I feel like once Spring hits my weekends are always jam packed with activities. While I love these crazy weekends it was nice to take some time for myself last weekend and spend an hour in my happy place, the Farmers Market.
I am not quite sure I can fully explain how excited I get to go to these markets. The people are amazing and so knowledgeable about the products they are selling. The inventive and entrepreneurial nature of the market is infectious and it really sparks my creativity.
While I could have happily dwelled near the succulents for the majority of the day the real prize I brought home was the bison meat. I have tried bison before but I have never tried to make it myself and I may never go back. The meat is so lean and its flavor alone is unbeatable but with a few key additives the burger went from a 10 to a 20.
As this was my last meal on my Keto diet I knew I couldn’t have bread so I assumed I would use lettuce wraps. Honesty, after making the burgers and smelling them for ten minutes I forgot about buns or bun replacements entirely and just ate them with sprouts, tomatoes, avocado, and a little bit of hot sauce. THEY. WERE. SO. GOOD.
Keto, on the other hand, I am happy to be over. This diet just was not for me. While I loved the energy boost I received, that was not reason enough for me to carry on with it. Unlike Whole30 and Paleo I couldn’t get excited about the meals I was making and there are a lot of ways to unintentionally cheat. I can see this diet’s short term benefits but for me that is where it ends.
So while parting from this particular month will not be such sweet sorrow, missing out on this insane burger would be.
