This post was supposed to go out yesterday but due to gorgeous weather and some extra family time it was delayed. I honestly think Easter is the easiest holiday to have food restrictions. That being said, I am not a huge candy person. I was more focused on my favorite meal of the weekend, BRUNCH.
Late last week I learned I was having a portion of my family over for the holiday so I quickly searched my favorite blogs for some Paleo Easter inspiration. The resulting meal was fantastic. So fantastic I did not have time to photograph the spread.
I used this Southwest Sweet Potato Hash from PaleOmg adding some ground turkey to the mix for my carnivore relatives and this Green Shakshuka for the vegetarians. Along with the mains I had a fresh fruit bowl, beautifully colored hardboiled eggs, and a bagel and lox board. I know bagels are not Paleo but lox, capers, pickles, and eggs are just as delicious without the bread.
