It seems to me that the weeks around Christmas and New Years are a vortex. It pulls you in, disorients you, throw every carb and sugary food at you, and then just like that, it’s back to business as usual. Its no wonder so many people get sick over the holidays and the start of year. This year, I was one of them.
I thought I was in the clear after my boyfriend got sick and I didn’t. Flash forward a few days to our New Years Eve visitors who showed up under the weather and I was toast. So, now that the plague is upon me how do I cope?
The first few days I stick to the B.R.A.T diet. That usually kicks out the lesser colds when paired with lots of sleep. This years cold was different, I needed the big guns, Pho!
I believe I have waxed poetic before on the blog over my love for this gorgeous and restorative soup. I may even have posted a vegetarian version on the blog before. Yet, since I had my first free Sunday of the year I decided to try my hand at making beef pho with bone broth.
Bone broth is the ultimate in healing. I am freezing the rest of the broth for future soups or to sip when feeling a bit under the weather in upcoming months.
