A Recipe for the Dog Days of Summer


I am in extreme denial. Summer is coming to an end and I am holding on fiercely. I don’t feel like I have had enough pool days, enough cookouts, or read enough books! While I am excited for my favorite season, Fall, I feel like I need to celebrate the waining days of Summer with something special.

It hit me recently that I bought a spicy honey at the Farmer’s Market  earlier this Summer and I have yet to experiment with it. I make a spicy honey chicken, a riff on an asian food classic, on my meal prep menu but what else can I do!? Spicy Honey Mustard Chicken Strips.

These strips of sweet, savory, and spicy will satisfy all your flavor cravings. I  took one bite and couldn’t wait to eat the rest. The flavors shine individually as the bite develops. A strong mustard flavor with a hint of sweet and spicy from the honey. One flavor not completely overwhelming the others but marrying together perfectly.

To get the perfect consistency in my sauce I used a bit of avocado mayo. This not only aids the creaminess of the sauce but it also continues the well rounded flavors.  I paired this chicken with a broccoli salad that was half from a bag and half left overs from my fridge. It is always fun to add your own spin to store bought mixes. It makes you feel like you are creating something new without actually taking the time to re-invent the wheel.

Spicy Honey Mustard Chicken Strips

This sauce is to die for. It is perfect on chicken, as a salad dressing, as a dip. The possibilities are endless.

  • Prep Time: 10m
  • Cook Time: 15m
  • Total Time: 25m
  • Serves: 2
  • Yield: 2 plates


  • 1 pound chicken tenders
  • 1/2 cup mustard (I used half grey poupon and half stone ground)
  • 1/4 cup avocado mayo
  • 2 tablespoons red chili pepper honey, of red chili pepper honey is not available use your favorite honey with a few tsp's of red pepper flakes
  • 1 teaspoon black pepper


  1. Preheat oven to 350 degrees
  2. In a medium sized bowl whisk together all ingredients but the chicken
  3. taste and add more mustard or honey in small portions to your liking. This sauce will already give you a bit extra for dipping the chicken in after
  4. Either drench the chicken in the sauce or lay the chicken out on a prepared baking sheet and pour sauce over just until chicken is coated.
  5. Bake for 15-18 minutes depending on your oven. Chicken should be just cooked through.
  6. Fresh out of the oven plate and add a bit more sauce to your liking. Serve with a broccoli salad like me or another of your favorite sides.
  7. Enjoy!
